The Apple Mail App on the MacOS operating system has a flaw that will allow encrypted emails to be left in plain text. If the Apple Mail app is configured to send and receive encrypted emails it will leave encrypted emails in plain text. The Apple Mail is stored in a file called the snippets.db file which is used by Siri. The file contains Contact information for apps. The only way to fix the flaw is to disable reading from Apple Mail with Siri. Apple has yet to release a fix for this since the issue has been occurring since July of 2019.
